Ingredients:
4 large Portobello mushrooms, stems removed
1 cup cherry tomatoes, halved
½ cup fresh mozzarella, diced
Fresh basil leaves
1 tbsp balsamic glaze
Olive oil, salt, and pepper
Instructions:
Preheat oven to 375°F (190°C). Brush mushrooms with olive oil, season with salt and pepper, and bake for 10 minutes.
Fill mushrooms with mozzarella, tomatoes, and basil. Bake for another 10 minutes.
Drizzle with balsamic glaze before serving.
