Instructions
Make the Crust:
In a food processor, blend the almonds, dates, vanilla, and salt until it forms a sticky dough.
Press the mixture evenly into a lined muffin tin (or silicone molds). Freeze while preparing the filling.
Make the Cheesecake Filling:
Blend the soaked cashews, coconut oil, maple syrup, vanilla, lemon juice, and coconut milk in a high-speed blender until smooth and creamy.
