A hearty, smoky chili that’s both comforting and nourishing.


Ingredients:

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 medium sweet potato, peeled and diced

  • 1 (14 oz) can black beans, rinsed

  • 1 (14 oz) can diced tomatoes

  • 1 cup vegetable broth

  • 1 tsp chili powder

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • Sour cream and avocado for topping

Instructions:

  1. Heat olive oil in a pot, sauté onion and garlic until soft.

  2. Add sweet potato, black beans, tomatoes, broth, and spices. Simmer for 20-25 minutes, until sweet potatoes are tender.

  3. Serve hot with sour cream, avocado, or your favorite toppings.
