Ingredients:
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 medium sweet potato, peeled and diced
1 (14 oz) can black beans, rinsed
1 (14 oz) can diced tomatoes
1 cup vegetable broth
1 tsp chili powder
½ tsp smoked paprika
Salt and pepper to taste
Sour cream and avocado for topping
Instructions:
Heat olive oil in a pot, sauté onion and garlic until soft.
Add sweet potato, black beans, tomatoes, broth, and spices. Simmer for 20-25 minutes, until sweet potatoes are tender.
Serve hot with sour cream, avocado, or your favorite toppings.
